I recently got a Spanish cookbook
and was blown away by some of the food in it.
One that I just had to try was sardines baked
with lemon juice, whitewine, and garlic,
topped with cheese, parsley and breadcrumbs
then baked to a golden brown and served in
individual casseroles.

Well, I don't like sardines but I played around and
came up with this. I actually used some lake Perch
that a friend cave me but it is also cood with Catfis.

Catelonian Cat Fish


      4 6oz Catfis Fillets
      Seasoned Flour
      1 Egg Whisked with 1/2 c Milk
      Corn Meal
      4 t Olive Oil
      Juice and Zest of one Lemon
      1/4 c White Wine
      4 Cloves Garlic, chopped
      1 1/2 c Provolone, shredded
      1/2 c Parmesan Cheese
      1/2 c Bread Crumbs
      2 T Fresh Parsley, Chopped
     
     1.      Preheat oven to 375º
     2.      Dust the catfish with the seasoned flour
     3.      Dip fish in the egg wash and then coat ti with cornmeal
     4.      Heat 2 tablespoons of olive oil in a saute pan and cook until golden, repeat with remaining fish
     5.      Arrange fish in a casserole dish and sprinkle with lemon juice, zest, garlic and wine
     6.       Combine cheeses, breadcrumbs and parsley and sprinkle over fish
     7.       Bake for 3o minutes until golden brown
     8.       I have also added Capers, Artichoke hearts or top with a little marinara sauce
