This is a great, simple recipe that
anyone can prepare
It really takes a little effort but can
really make a meal seam special.

I like to serve it with a green vegetable
and Sweet potatoes

Blackberry Pork Tenderloin


      1/3 c no sugar added seedless blackberry preserves
      4 ½ t Red Wine Vinegar
      1 T Sugar
      ¼ t Red Pepper Flakes
      1 t Vegetable Oil
      1 Pork Tenderloin
      ¼ t thyme
      ¼ t salt
     
     1.      Preheat oven to 350º
     2.      Combine blackberry preserves, vinegar, sugar, red pepper flakes
     3.      Heat oil in a non-stick skillet and add sear pork loin on all sides
     4.      Sprinkle with half of the thyme and salt
     5.      Pour in blackberry mixture over pork and place in the oven
     6.      Cook until sauce reduces to a glaze and pork is at desired temperature, about 25 minutes
