This is a great recipe and is perfect
for making you feel like spring and
summer is really getting here.
The salsa keeps for up to two weeks
and I try to keep some on hand for
unexpected guests
This can either be and entree or
a first course appetizer

Citrus Glazed Scallops with Avocado Salsa
      2 T Olive Oil
      1 ½ lb Sea Scallops
      ¼ t Salt
      ¼ t Pepper
GLAZE
      ¼ c Lime Juice
      ¼ c Orange Juice
      2 T Lemon Juice
      1 T Fresh Ginger
      2 T Honey
SALSA
      ¼ t Red Pepper
      1 Clove Garlic, chopped
      ½ c Green Onion, chopped
      ¼ c Cilantro chopped
      ½ c Tomato
      ½ c Avocado
      1 T Cilantro
      1 T Jalapeno
      1 T Lime Juice
      1 t Olive Oil
      Dash Salt
      Dash Pepper
      Lettuce Leaves for Garnish
     1.      Season scallops with salt and pepper
     2.       Heat Oil in a skillet over medium high heat
     3.      Sear scallops 2 minutes per side and set aside
     4.      In same pan, combine lime juice, orange juice,
              lemon juice, ginger, honey, olive oil, red pepper and garlic
     5.      Cook until shiny and it starts to thicken
     6.      Drizzle over scallops and top with green onions and cilantro
     7.      To make salsa, combine remaining ingredients and serve on lettuce leaves
